Chocolate Cherry Coke Cupcakes


I was really in a baking mood today, and wasn't sure what I wanted to try out.  Someone at work, actually, recommended I try to make cupcakes with Coke.  I took it a step further and made them with Cherry Coke.  Here is the result:


























Yes, they are fantastic and yes, they will be on the menu shortly.

Buttermilk Coconut Pie

The first time I heard of this pie, I was like "Eww".  I don't like buttermilk, and I am not the biggest coconut fan.  But when we first got our publicity in the Austin American Statesman, a new customer requested one, and we couldn't say no.

 



















We got together and baked one, and it was really good.  Our customer was happy, and has ordered the same pie from us every few weeks.  I'm not the best at pies (that's Holly's speciality), but I tried my hand at one, and it came out pretty good as well.  I took one to a friend and she loved it.

Experimentation

We had a fun day of baking! We tried our hands at a french toast cupcake with maple buttercream and a topping of candied bacon. They came out fantastic!




























The bacon looks slightly burned, but I assure you, it's really good.  We also made some truffles for
fun. Holly's little monsters helped.

























We had a blast baking while it was raining out.  And we are now happy to offer yet another flavor of cupcake- Breakfast at Tiffany's- also available in whoopee pie form.  I hope you have a lovely weekend!

The Radioactive

Here is a cupcake that is very near and dear to my heart.  Anyone who knows me knows that I am a Mountain Dew addict.  Call me white trash, but whatever...

My boyfriend actually came up with this idea- Mountain Dew cupcakes, along the same vein as the popular 7-Up cakes from the 1950s.  My first attempt was a miserable failure, as the cupcakes were dry, stuck to the paper, and were oddly crunchy around the edges.

But I don't give up so easily.  I revamped the recipe, added a little of my own flair, and VOILA!  We can proudly bring you the Radioactive cupcake!


The batter was beautiful, if a bit green.  I wanted it to be more yellowish green, like the soda, but I got carried away with the green.  I'm prone to that kind of thing.

Here is the finished product with a lightly lemoned buttercream frosting.




















They were a hit at my work.

Cake Pops!

Cake pops have long been the bane of my existence.  They are so cute, and look so easy, and taste so good, and there are so, so many possibilities.  Yet, she's always had a problem making them look pretty.

Today, we decided to give them another shot, since there has been expressed interest in them.  We had some help from cute little hands, and it was quite fun.  I have to repeat to myself "Practice makes perfect."  I don't know why I thought I'd be a pro the first couple of times I did them.

Here is what I learned:
1.  Melt more candy than you think you'll need.
2.  Make the balls smaller.
3.  It will probably take a few times to get them perfect.
4.  If they look lumpy, cover them in sugar or other kinds of sprinkles, and no one is the wiser.

So, I think that with a little practice, we will be able to add cake pops to the menu!
